Why vacuum sealing beats a tub with a lid
Air is what spoils food, not the fridge. Take it away and most things last several times longer — though not everything, and not for the reason most people assume.

What actually goes wrong
Three things ruin food in a fridge, and two of them need oxygen. Aerobic bacteria and moulds cannot grow without it. Fats turn rancid through oxidation, which is oxygen again. The third is moisture simply leaving, which is what turns cheese hard at the edges and gives meat that dull grey surface.
A clip-lid box slows all three down a little. It traps a box-sized volume of air against the food and keeps the fridge’s dry draught off it. That is genuinely useful, and for most leftovers it is enough.
What removing the air changes
Pulling the air out takes away the oxygen the bacteria and the fats both need, and it presses the bag flat against the surface so moisture has nowhere to go. What is left is a much slower version of the same decline.

The freezer row is the one that pays for the machine. Freezer burn is not the cold damaging the food — it is water escaping the surface as vapour and crystallising elsewhere in the bag. With the plastic held tight against the food there is no headspace for that vapour to collect in, so it does not happen.
Where it makes no difference
Sealing does nothing about anaerobic bacteria, which do not want oxygen in the first place. That matters more than it sounds: a sealed bag is a better environment for some of them than an open dish, because you have removed their competition.
So sealing is not a substitute for refrigeration, and a sealed bag left on the counter is worse than an unsealed one. Everything below still goes in the fridge or the freezer, and the dates above assume it.
Things that seal badly
Anything wet gets pulled up the bag and into the machine, where it stops the seal forming and eventually reaches the pump. Freeze soups and stews in a tub first, turn the frozen block out, and seal that.
Soft fruit, fresh bread and anything with a bone all suffer too — the first two get crushed, the third punctures the bag. Chill soft items on a tray for twenty minutes before sealing and they hold their shape, or use a rigid container for those and keep the bags for flat things.
Getting a seal that holds
Most failed seals are one of three things. The bag mouth was not dry, so the weld never bonded. Food was too close to the seal line, which wants a clear 5 cm. Or the bag was reused and already had a pinhole, which is invisible until the bag re-inflates overnight.
That last one is the useful test: if a bag has puffed back up by morning, the seal has failed and the contents have been sitting in air, not in a vacuum. Reseal it or use it.
A pump that will not hold vacuum inside two years is a fault. Suction fading, or a machine that runs but never reaches pressure, is covered by the guarantee and the burden of proof is ours. Bags going cloudy or scratched with use is wear, and is not.
