Why a cheap pan warps and a good one does not

It is the base, not the coating. What happens in the two seconds after the hob goes on decides how long a pan lasts.

The two seconds that matter

Turn on a ring and the metal directly above it climbs several hundred degrees while the rim of the pan is still at room temperature. Metal expands as it heats, so the middle of the base is trying to grow while the edge is not. Something has to give.

In a thin single-layer pan what gives is flatness. The base bows, and past a certain point it stays bowed, because the steel has been stretched rather than simply bent. That is a warp, and it is permanent.

What tri-ply actually does

A tri-ply base is three bonded layers: stainless on the outside, a thick aluminium core, stainless again on the cooking surface. Aluminium moves heat sideways roughly fifteen times faster than stainless steel does.

So instead of one hot spot over the flame and a cold rim, the core spreads that heat across the whole base within a second or two. The temperature difference that was pulling the metal apart never gets large enough to matter, and the stainless skins on either side hold the sandwich rigid while it happens.

The aluminium is doing the cooking. The stainless is there because aluminium reacts with acidic food and is soft enough to scratch.

Thick is not the same as heavy

Weight in the hand is a poor guide, because a heavy pan may simply have a heavy disc welded to the bottom rather than a bonded base running the full width.

Look at the rim instead. Where a pan is fully clad you can usually see the three layers as a faint sandwich at the cut edge. A disc-bottomed pan has a visible step where the disc ends and a single-thickness wall above it — fine for boiling water, poor for anything that catches.

The ring size problem

Even a good pan can be pushed past what its base can even out. A 24 cm pan on a 14 cm ring concentrates all that energy into the middle third, and the core can only move heat so fast.

How to warp a good pan anyway

Two habits do it. Heating a pan empty on a high flame, because there is no food or water absorbing energy and the base climbs far hotter than it ever would in use. And running cold water into a hot pan, which contracts the cooking face while the outside is still expanded — the same stress in reverse, applied far faster.

Let a pan come down to warm before it meets the sink. If you are deglazing, the liquid should go in while the pan is still on the heat, not after it has come off.

Telling whether a pan is already warped

Put it on a flat worktop and press one edge. If it rocks, the base has moved. On a glass or induction hob you will also hear it: a faint ringing as the pan settles, and oil that runs to one side instead of pooling in the middle.

A warped base cannot be usefully flattened at home. On induction it will never make proper contact again, and on gas it wastes a surprising amount of heat for the rest of its life.

Warping inside two years is a fault, not wear. A base that bows in normal use on an appropriate ring is covered by the guarantee, and the burden of proof is ours, not yours. A photograph of the pan rocking on a flat surface is usually all the evidence a claim needs.
